Amuse-bouche: Langoustine ravioli & saffron bisque
Starter: French duck foie gras, apples, quinces and gingerbread or Pan-fried foie gras escalope, sautéed mushrooms with parsley and garlic
Fish: Pan-fried pike-perch fillet, Jerusalem artichokes and smoked bacon from Remy's
Meat: Veal & sweetbreads, Haut du Them shiitake, coffee and celeriac risotto or Capon and guinea fowl ballotine, chestnuts and winter vegetables
